Ermitage barrel – Sesamed red tuna tataki

ERMITAGE barrel, 100% Bertranges, blond toast

SESAMED RED TUNA TATAKI, VINEGAR RICE ET AVOCADO ICE CREAM

 

We have chosen to serve this red tuna marinated in sesame oil and lemongrass, with vinegar rice, served with a dash of sweet soy sauce and avocado ice cream.

The sweetness of rice and ice cream meets the freshness of tuna here. To these three elements, we have associated the Bertranges forest, symbol of the ERMITAGE cooperage, with a blond toast, on a dry white wine.

We have always been convinced of the value of this association, always bringing freshness to the wines it accompanies. Tension is, today, and even more with global warming, a real common thread in the wines of the winegrowers who trust us.

For this recipe combining sweetness and freshness, what could be better than the blond toast, synonymous with both sweetness and tension in the wines? And why not combine it with a grape like Petit Manseng, in a dry Jurançon? Or a Chardonnay from the Côte Chalonnaise?
